You might be sceptical of this pudding recipe after a quick scan of the ingredients, but you can’t knock it until you’ve tried it.

We always have faith in @healthy_floflo to come up with the most creative healthy recipe ideas that are surprisingly simple and easy for even the least confident cook to achieve. This one really nails all the above.

Made with just a generous scoop of ice, water, and some of our deliciously indulgent dark chocolate & salted caramel flavoured Impact Whey Protein – this is a dessert that will definitely fit your macros and satisfy your sweet-tooth at the same time. Talk about winning. According to Flo, the trick is to trust the process and keep blitzing until you get the most amazingly silky, fluffy consistency ever. Yep, it’s really that simple.

Named a cloud pudding for a reason, it’s super-light and soft, kind of like a high-protein, airy mousse. The nutritionals speak for themselves too – what other sweet treat can hit the spot in under 50 calories a serving?

First, add the ice, water, and Impact Whey Protein to a food processor and blitz until it becomes smooth and airy. Tip: don’t give up on the blitzing until you have a smooth and silky consistency, it will take a few minutes but trust the process.

The mixture should be ready after a few minutes, a good way to tell is once it’s changed colour – going from a dark brown to a much lighter colour.

Pour into a glass or small ramekin to serve. If you’re feeling fancy, dust the top with some unsweetened cocoa powder or finely chopped dark chocolate for the ultimate garnish.
