Healthy No-Chocolate Truffles

OK, hear me out. These might have no chocolate, but they taste just as indulgent.

While I do love a chocolate truffle, if you’re looking for a healthier version that packs in more fibre and protein, these no-chocolate truffles from

are a winner.

Sticky, fudgy truffles coated in cocoa powder are the perfect after-dinner treat that’ll leave you feeling fully satisfied. And with 3g of fibre, 3g of protein and just 140 calories per truffle, they’ll satisfy your macros too.

Ingredients

  • 10 Medjool dates, pitted
  • 1tbsp. coconut oil
  • 25g cocoa powder
  • 1/2 tsp. vanilla extract
  • 25g peanut butter
  • 2tbsp. water
  • 60g almond flour
  • Extra cocoa powder for dusting

Instructions

  1. Combine your dates, coconut oil, cocoa powder, vanilla extract, peanut butter, water, and almond flour in a blender and blend until completely combined.

  2. Using a spoon, scoop out some mixture and roll into 10 evenly sized balls, laying each one onto a baking tray lined with greaseproof paper.

  3. Next, roll each ball in a bowl of cocoa powder until fully coated.

  4. Relay each ball onto your baking tray and freeze for 30 minutes.

  5. Enjoy on their own or with a side of ice cream for an indulgent dessert.
