Even if the weather isn’t playing ball with your barbecue plans, don’t let that stop you from enjoying a classic summer recipe. These deliciously juicy chicken skewers from @healthy_floflo can be made any day of the year, rain or shine. 

Made with a simple but oh-so tasty marinade, these skewers will have you coming back for seconds. Complete the meal with a portion of rice and your favourite fresh veg or salsa, and you’ll have the perfect macro-balanced packed lunch to keep you satisfied throughout the day.  

Serves 3 

 

 

Ingredients

  • 1 tbsp siracha
  • 40g honey
  • Juice of half a lime
  • 2 tbsp soy sauce
  • Pinch of salt
  • 2 garlic cloves (crushed)
  • 1cm piece of fresh ginger (finely chopped or grated)
  • 400g chicken (cubed)
  • 1 red onion

To serve: 

  • 75g cooked basmati rice per portion 
  • Vegetables/salad of choice 
  • Chopped coriander to garnish 

Instructions

1.

To make the marinade, combine the garlic, ginger, lime juice, honey, soy sauce, sriracha, and salt in a small bowl.   

2.

Put the chopped chicken into a large bowl and pour in the marinade mixture. Stir to coat all the chicken pieces evenly, then cover and put in the fridge to marinate overnight.

3.

When ready, take the chicken out of the fridge and chop the onion. 

4.

Assemble the skewers by threading each one with chicken cubes and onion alternately. 

5.

Place in the air fryer and cook for 10 minutes at 180C. Then flip and cook on the other side for 7-10 minutes.  

6.

Serve the skewers with a portion of cooked basmati rice and veg of your choice. Flo recommends shredded carrot and cucumber slices for a fresh crunch.  

7.

Eat straight away or store in the fridge for a delicious protein-packed snack
