This recipe from @counting_zacros combines three of the world’s best creations — peanut butter, marshmallows and chocolate — into one gooey sandwich cookie.
Packing 21g of protein and just 215 calories, this is a great dessert option for when you’re craving something sweet but also want to boost your protein.
Zac says this sandwich cookie is “stupidly moist” and takes under five minutes in the oven. Ideal. So, in Zac’s words, let’s “give this bad boi a crack”.
Ingredients
- 25 g oat flour (blended oats)
- 12 g Slow-Release Casein - Vanilla
- 12 g Powdered Peanut Butter
- 2 g baking powder
- 30 g fat-free Greek Yoghurt
- 30 ml unsweetened almond milk
- 3 g Sugar-Free Syrup - Maple
- A few drops Flavdrops
- 5 g mini dark chocolate chips
- 5 g sugar-free marshmallows
Instructions
Preheat the oven to 180C.
Add flour, protein, peanut butter and baking powder to a mixing bowl and whisk to combine.
Next, add your Greek yoghurt, almond milk, maple syrup and FlavDrops into the same bowl and stir until you have a cookie dough. Then add your marshmallows.
Once the mixture is workable by hand, form into a cookie shape on either a baking sheet or in a 5″ skillet and add your chocolate chips.
Place in oven for 4 minutes and 45 seconds at 180C. Once it’s done cooking, leave to cool before digging in. Ice cream is optional.
