These berry chia bites from @healthy_floflo are so good at satisfying sweet cravings without resulting in a total splurge in the biscuit supermarket aisle. Always a win.
You just need 5 ingredients. And these happen to be completely plant-based too, making this a great vegan-friendly, gluten-free snack to fall back on.
The combination of a tart berry centre and rich chocolatey coating really hits the spot. Make up a batch and find out for yourself what all the fuss is about.
Ingredients
- 250 g frozen berries
- 2 tbsp. Organic Chia Super Seeds
- 2 tbsp. maple syrup
- 100 g dark chocolate
- 2 tsp. 100% Coconut Oil
Instructions
Place the frozen fruit into a bowl and, once the fruit is a bit softer, add the chia seeds and maple syrup.
Use a fork to press down and mash the ingredients together, mixing well.
Prepare a chopping board with some baking paper on top (this will make the next step easier) and scoop one tablespoon of the chia mix onto it to form a disk shape. You should have enough mixture to make around 10 bites.
Freeze for 1-2 hours or until solid.
In the meantime, melt the dark chocolate – for this Flo adds 2 teaspoons of coconut oil to 100g of chopped dark chocolate. Microwave for 1 minute and 30 seconds, stopping to stir at every 30 seconds.
Take the chia bites out of the freezer and dip them into the chocolate. Use a fork to help and cover all sides. Top tip: try and do this part as quickly as you can as the chocolate will solidify pretty quick.
Lay the chocolate-coated disks onto your baking paper-lined tray. Flo then drizzles extra chocolate over the bites as decoration, but this is totally optional.
Put back in the freezer for 1-2 hours for the chocolate to set.
Enjoy them straight out of the freezer for a crunchy bite or — as Flo prefers — let them sit out of the freezer for 10 minutes for the middle bit to be softer.
