Reinvigorate your snack time with our peanut butter crackers. Nutty and full of crunch, they’re tasty by themselves, but equally as good with dip or as a garnish on your favourite summer salad. This recipe is not to be slept on — head to the kitchen and whip these up in no longer than half an hour. Try not to eat them all straight off the baking tray, but we wouldn’t blame you if you did. They’re just so tasty when warm out of the oven.

Servings
25 crackers

Ingredients

  • 800 g self-raising flour
  • 1/2 tsp. salt
  • 3 tbsp. peanut butter
  • 45 ml water
  • 1 tbsp. sesame oil
  • 1 tbsp. sesame & nigella seeds

Instructions

1.

First put the flour, salt, peanut butter and water into a bowl, and mix thoroughly

2.

When the mixture is mostly combined, knead with your hands until it forms a ball

3.

Next, cover a baking tray with baking parchment, and roll out the dough until 1cm thick

4.

Using a pizza cutter or a sharp knife, cut the dough into slices roughly 4cm by 10cm

5.

Then brush the slices with a sesame oil wash and sprinkle over the seeds

6.

Bake at 180 degrees for 18/20 minutes

7.

When cooked, enjoy with a dip of your choice — we think they’re great with hummus!

If she’s not in the kitchen, she’s tucked up with a book for an early night, or you’ll find her in the gym working up a sweat. Afterall, all those carbs require quite the appetite.
